OKay, Bella had been infatuated with Edward right from the start, until Eclipse, when she realised that she was truly, properly in love with Edward. I liken Bella's initial infatuation to drugs. Starting on them in Twilight, then withdrawal symptoms via forced 'cold turkey' that Jacob helped stop in New Moon, then she snatches the first chance to get back to the drug a.k.a. Edward because it wasn't her choice to go 'cold turkey'.
But she'd fallen in love with Jacob as well, when Edward had left, because Jacob filled most of the 'hole in [Bella's] chest'. This is because, if there had been no such thing as vampires or werewolves and Edward had died of Spanish Influenza in 1918, Jacob would've been Bella's soul mate. A proper soul mate.
As Jacob describes, "I'm exactly right for you, Bella. It would have been effortless for us — comfortable, easy as breathing.
